the best way to learn the secrets of tuscan cuisine while having fun! Our tuscan cooking courses are designed to teach the basic traditional Tuscan recipes, with the intention of creating genuine dishes, using our organic products and km zero pasta.
We have been farming and producing organic products for over 25 years, with a great deal of respect to the environment and personal health. We produce pasta using our organic flour, extra virgin olive oil made with our organic olives, sauces, jams, and mustards all prepared directly with fruits and vegetables grown in our gardens and picked by hand.
Our fruit trees and vegetable gardens are completely organic, thus we do not use either pesticides or chemical fertilizers. Each tuscan cooking course begins with a brief description, then, when possible, the picking of the necessary ingredients from our vegetable and herb gardens.*
We teach the entire process of particular dishes from start to finish!
The tuscan cooking courses are taught by our chef and take place in our kitchen restaurant. Together we will also prepare products which are available to buy directly from us or from our shop online: http://shop.diacceroni.com/
The cooking courses are open to all, adults and children, and each participant will receive a cooking kit which consists of an apron and a chef hat.
At the end of the course all participants will eat the dishes that they have prepared together.
Each participant will receive a certificate of participation.**

Our tuscan cooking courses
Fresh pasta course
After a brief introduction, we learn how to prepare the most typical dish of Italian cuisine – Pasta: Fresh pasta, Lasagna, and potato Gnocchi. We will learn how to make pasta from start to finish, and will conclude with eating the products of our labours all together. Pasta is created from simple ingredients, mixed together to create a unique dish prepared completely by hand.
At the end of the course we sit down together to enjoy the dishes that we have made.
Tuscan soup with Diacceroni organic extra virgin olive oil course
One of the excellent typical Tuscan dishes is the soup (zuppa). After a brief introduction we will pick the necessary ingredients from our vegetable garden: tomatoes, courgettes, carrots, peppers etc. Together with a few other ingredients, including our extra virgin olive oil produced directly by our olive press, the vegetables are transformed into an excellent soup. At the end of the course we sit down together and enjoy the Tuscan soup.
Vegetable and meat sauces course
After a brief introduction we will pick the necessary ingredients from our vegetable garden, to produce sauces that are used with pasta or spreads on toasted bread. After having cleaned the ingredients, we will proceed with the chopping and dicing. At the end of the course we will taste the results of our labours, accompanied by our excellent wines.
Barley and dried organic beans course
This course is a brief explanation to introduce you to the dried legumes produced on our farm, how to prepare them and how to use them. We offer a description of the various legumes, such as barley, fagioli beans, chick peas and lentils, which together with other in-season vegetables produce dishes that are healthy, tasty and full of energy.
Cheese, salami, jams, honey and mustards tastings
After a brief description regarding the typical Tuscan antipasto, in this course we discover the relative secrets to preparing mustards, the ingredients of which come from our vegetable gardens. Also we will learn how to slice the various cheeses, salamis and hams in the correct manner for an antipasto, and how to match them with our jams, honeys and mustards. At the end of the course we will taste all that we have prepared, accompanied by our excellent wines.
Jams and desserts course
After a brief introduction, this course will cover how to select and prepare the fresh fruits from our orchards. After having prepared the ingredients, an explanation of how to make jams, and subsequently how to use these jams in desserts, such as biscuits and tarts will occur. We will also teach how to make the pastry required for these desserts during the course. At the end of the course we will enjoy the products of our labours.
